Yummy Fudge Brownies

Yummy Fudge Brownies

1 9 x 13 pan or spring pan well oiled.  Line bottom with parchment paper.
or Pampered Chef Individual Brownie Pan lined with parchment paper muffin cups
Preheat oven to 350º F.  Bake in middle of oven.
1 Simple Mills Chocolate Muffin & Cake (Boise Coop, Natural Grocer, Amazon)
3 Large Eggs
1 Tablespoon Vanilla Extract
6 Tablespoons Olive Oil (recipe calls for butter)
3/4 Cup Florida Crystals raw sugar (recipe probably means white sugar)
2 1/4 oz pecans broken up by hand
2 oz Enjoy Life dark morsels

In a bowl add eggs, vanilla, and olive oil.  Mix until well blended.  Add sugar and mix well.  Let sit for about 15 minutes so sugar can absorb some of the moisture so it won’t be “grainy”.  Mix well.

Add Chocolate Muffin & Cake mix, pecan pieces, and chocolate morsels.  Mix until well blended.  Unlike flour containing gluten, the brownie will not “toughen” if you beat it too much.

Pour into 9 x 13 pan and smooth top.  Place in middle of oven and bake 30 minutes.
Pour into Pampered Chef individual Brownie Pan lined with parchment paper muffin cups.  Place in middle of oven and bake 18 minutes for fudge brownies.  It erupts like lava all over the brownie pan.  Don’t despair, looks are deceiving.  Delicious!

Take out and cool in pan.

9 x 13 pan.  Once cooled, loosen brownie sides and flip on to a dish that will hold a 9 x 13 brownie.  Cut into sizes you like.  Almond flour tends to create a very tender brownie so don’t be surprised if the pieces don’t turn out picture perfect.

The brownies will be yummy no matter how they look.
