Roasted Coppa

We bought a 2.5 pound coppa.  We asked what it was and the butcher said that it was the upper portion of the butt that doesn't have any grizzle but the meat is marbled.  We're slow roasting it for 4.5 hours.  Yummy!

Slow Roasted Coppa

2.5 pound coppa from Tails & Trotters

Preheat oven to 250°F.
Wrap coppa in double layer of heavy duty aluminium foil and place on baking sheet.
Slow roast for 4.5 hours.
