Vege Medley with Baked Potato and Hamburger

Vegetable Medley

2 medium zucchini deseeded if necessary

1 bunch asparagus

1/2 lb baby carrots or some nice looking carrots

1/2 small onion

1 bunch broccoli (optional)

whole, peeled garlic (optional, my guess as many as you like)

Chosen Foods or Pompeian 100% Avocado Oil Spray 

1 Tbsp BD Seasoning

Additional BD Seasoning may be necessary for taste



Dice zucchini, asparagus, carrots.  Cut half small onion into fourths. Put all vegetables into a large mixing bowl. Spray the vegetables to coat them with Avocado Oil and sprinkle with 1 Tbsp BD Seasoning.  Mix well.  Let marinade for 15 minutes.


Spray a large frying pan with cover with Avocado Oil. Heat to where the oil coats the pan but not sizzling.  Add marinaded vegetables.  Stir.  Cover.  Steam for 15 minutes over medium heat.  Stir.  Taste.  You may need to add more seasoning. If it’s not cooked enough, cover and steam for another 5 minutes.


I am guessing this medley will work really well over noodles like lo mein, spaghetti noodles, etc.  


My favorites:

Grill prime fillet mignon in the Ninja Grill.  Slice the meat.  When the vegetable medley is done, stir the meat into the medley.  Serve.  Excellent!


Roast a loin roast in the Ninja Grill.  Slice the meat from 1 chop.  When the vegetable medley is done, stir the meat into medley.  Serve. Excellent!


Hamburger patties in the Air Fryer.  Microwave baked potato.  Split potato and add vegetable medley.  Add hamburger patties. Yummy!
