Chuck Roast in the Instant Pot (2 for 1 dinners)

We used the recipe to make kalua pork in the Instant Pot to make chuck roast.  Worked out great.  And we have stock to make vegetable beef soup.  These 2 for 1 dinners are so great!

Chuck Roast in the Instant Pot
About 5 pounds of Chuck Roast cut in chunks
Salt the chunks and put into the Instant Pot
Add 1 1/2 Cups of water

Set the Instant Pot to manual and cook for 90 minutes.
When done, turn off and allow to depressurize slowly.
Take meat out and save the stock.

No fuss dinner.  Serve roasted meat with baked potato or rice.

Beef Vegetable Soup
About 1/3 of meat from above roast, cut up into bite sized pieces
Reserved beef stock
Dice carrots (1/2 package of baby carrots cut in half) and celery (about 4 stalks)
Peel 4 small Idaho potatoes and dice (keep in salted cold water to keep it from discoloring)

Heat beef stock.  Taste.  If too salty, add water.

Once the stock is boiling, add the carrots and celery.  Bring to boil and simmer for 10 minutes.

Add the diced potatoes; bring back to boil and simmer for 20 minutes.

Add the roasted meat and bring back to boil.  Simmer for 10 minutes.

It is dinner time!
