Almond Flour Pancakes

Two days ago, we had almond flour pancakes with Cracker Barrel Country Fixin's 100% Pure Natural Syrup!  Delicious.  Remember the old time Log Cabin Syrup?  Almost the same flavor.

Silver Dollar Pancakes by Elana Amsterdam minus a few ingredients we can't have.  They still come out fluffy and delicious!

B&D Pancakes (medium-sized)

3 large eggs
4 Tablespoons water
2 Tablespoons Canadian Maple Syrup from COSTCO
1 1/2 cups blanched (Honeyville) almond flour
1/2 teaspoon baking soda
Green Pan & olive oil for cooking
Mikasa Large Serving Spoon to scoop batter

Preheat oven to about 200º and heat the serving plates
In a medium bowl whisk eggs, water and Maple Syrup
In a large bowl combine almond flour and baking soda
Add the egg mixture to the almond flour mixture
Whisk thoroughly
Heat a very small amount of olive oil in the Green Pan
Scoop a serving spoon of batter at a time into the pan
When pancakes form little bubbles and start to pop, flip pancakes
Make sure that the pancakes are well done and remove them to one of the pre-warmed serving plates
Continue to make more pancakes until all the batter is gone

Makes about 12 medium-sized pancakes.  Serve with Cracker Barrel Pure Natural Pancake Syrup.
