Weʻve tried this lunch several times now and it seems to be relatively benign.  It is fast, easy and we think it tastes great,
Hamburger and Potato Scramble
1 # 90% lean hamburger (we get ourʻs from the meat counter at Fred Meyerʻs)
2  stalks medium celery chopped
1  medium carrot chopped
1/2  large baked potato or 1 whole medium baked potato, chopped
2  Tablespoons California Olive Oil
In a medium wok (I use a 5qt Emeril pan by All-Clad that I purchased many years ago that looks like an American style wok with handle) heat olive oil and sautée the hamburger.
Add the chopped celery and carrots.  Cook for about 3 minutes.
Add the chopped, baked potato.  Cook and stir until potato is warmed through.
Lunch is ready to serve with some iced Smithʻs Tea!
