No Sulfite - Vege Stock Hamburger Scramble

This is a different take on the Hamburger and Potato Scramble.  I make a little broth from the celery and carrots, then cook the hamburger in the hot broth and lastly add the chopped potatoes.  Great without the added olive oil!

Vege Stock Hamburger Potato Scramble

1 # 90/10 hamburger
3-4 stalks celery chopped
2 medium carrots chopped (I use shredded carrots for convenience)
1 large baked potato chopped
About 1 cup water
1/2 tsp salt to taste

In a large skillet add the chopped celery and carrots and cover with water (about 1 cup).

Add 1/4 tsp salt.  Bring the mixture to a boil.  Simmer until the veges are al dente.

Make space in the center and work the hamburger into the mixture.  Add 1/8 tsp salt.  Simmer for about 5 minutes.

Make space in the center and add the chopped baked potato.  Add 1/8 tsp salt.  Mix well and simmer for another 3 minutes.

Let sit for about 5 minutes.  Serve.

Great dish to make if you have leftover baked potato from the evening before.
