Chocolate Walnuts Meringue Cookies - Take 2

This version is the best we've done!  Try it.


Chocolate Walnuts Meringue Cookies 2014-09-17 Version (best ever)

3 extra large egg whites
1/2 cup Florida Crystals organic cane sugar
11-oz Alma Drinking Chocolate melted and cooled to room temperature
1 cup chopped Woodstock Organic Walnuts

Line 2 baking pans with parchment paper.

Preheat oven to 325°F.

Beat egg whites slowly and when froth forms, add 1/2 the cane sugar and beat on low for 5 minutes.  

Add the rest of the sugar and beat on medium until soft peaks form.

By hand, gently fold in melted, cooled chocolate and walnuts until just blended.

Drop by tablespoonful, about 2 inches apart on parchment paper.

Bake 15 minutes.  Take out of oven and cool for 3 minutes on the baking sheet.  The house is going to smell so delicious!

Makes 18, 2 1/2” to 3” cookies.  Best after being refrigerated overnight.  Tender and slightly chewy inside.
