Another T&T Pork Soup

Another Gluten Free Tails and Trotters Pork Soup.

Meatballs

1.25 lb Tails and Trotters ground pork
1 extra large egg
4 strips of bacon fried crisp and crumbled

Preheat oven to 400 degrees F.
In a medium mixing bowl, combine the crumbled bacon, T&T ground pork and egg.
Using your hands, mix ingredients well.
Roll into 12 meatballs.  Place the meatballs into individual muffin tin cups.  The 12-cup muffin pan is perfect.
Bake for 30 minutes or until browned.

Soup

1 T California Olive Oil
1 2” deboned T&T pork chop cut into 1” cubes
4 slices bacon chopped
10 sprigs fresh thyme, strip leaves and throw out stems
10 sprigs fresh Greek oregano, strip leaves and throw out stems
10 sprigs fresh marjoram, strip leaves and throw out stems
1/2 bundle of cilantro, chop the leafy part and discard stems
2 C water
1 quart T&T Pork stock
1 carrot chopped

In a large dutch oven sauté bacon until brown.
Add pork chop pieces.  Add carrots and pork chop.
Add 2 C water to deglaze.
Add the pork stock, cilantro, herbs and set to hi-simmer for 30 minutes.
Add the meatballs and return to hi-simmer for 90 minutes.
Cool.  Refrigerate overnight.
Skim fat off top and heat.  You may add a chopped up potato and carrot at this point.  Simmer for 30 minutes to cook the potato and carrot.

Ready to eat.
