On Thursday we bought a whole Arista roast and had it cut in half. We didn't think that a whole roast would fit in our oven! Today we roasted it. This is the smaller half.

Arista Roast
1 5 1/2 lb Arista Roast from Tails & Trotters
Preheat oven to 300°F.
Place Arista Roast on rack in shallow pan. Cover with foil.
Roast for 5 hours.
