Yum, Tails and Trotters Pork Chops for Lunch

We drove to Laurelhurst Market to buy two Tails and Trotters Pork Chops for lunch.  Yummy!  Here's what we had:

Pan Seared Oven Roasted Tails and Trotters Pork Chops

Sauteed Mushrooms

Mashed Yukon Golds












Pan Seared Oven Roasted Pork Chops

2 one inch cut Tails and Trotters Pork Chops
1 Tablespoon California Olive Oil
1 Dutch Oven
Preheat Convection Oven to 425°F

Heat olive oil in dutch oven and sear pork chops 6 minutes on each side.
Put the dutch oven into the preheated oven for 10 minutes.

Sauteed Mushrooms

10 very large white mushrooms cut into bite sized pieces
4 Tablespoons of Straus Butter
1 Tablespoon California Olive Oil
1 large frying pan with cover

Heat butter and oil in frying pan.
Add mushrooms.  Cover.  Cook until done.

Mashed Yukon Golds

6 large Yukon Gold Potatoes cut into cubes
4-6 Tablespoons of Straus Butter
1 large pan with cover

Cover the potatoes with water.  Bring to boil.  Set on high medium for about 15 minutes.
Drain.  Let sit for about 5 minutes so all the water evaporates.
Mash.  Add the butter and mash some more.
