Boiled eggs, delicious by itself or as a base for other goodies like egg salad or nicoise salad or deviled eggs.
Boiled Eggs
4 extra large eggs
water
1 medium pot with lid
8" cooper wire strainer (Chinese Cooking Utensils)
1 large mixing bowl
ice
1. Fill pot about 3/4 full. Cover and bring to boil.
2. As soon as water boils, take eggs out of the refrigerator, take cover off pot, place eggs into 8" strainer and lower into boiling water. Cover and bring back to boil.
3. Turn fire off and allow the eggs to sit for 25 minutes.
4. After 25 minutes, fill large mixing bowl 1/2 full of ice; add water and stir. Water should be very, very cold.
5. Take lid off pot; using the strainer fish out the 4 boiled eggs and place immediately into the cold water bath. Let them rest for 10 minutes.
6. Take eggs out. Perfectly boiled eggs are ready for anything you have planned.
