Bacon Gravy!

The one food item that I miss most of all is gravy.  Like mashed potatoes and gravy; roast pork with gravy; roast beef with gravy; Hawaiian hamburger with gravy; etc, etc.

The other day we were planning on roasted pork ribs with baked potato.  Gravy, Would Be Nice.

Bacon Gravy

2 Tbsp Paleo Flour from Bob's Red Mill
1  Cup water
1 1/2 tsp salt or your preference
2  strips of thick cut meaty bacon; remove most of fat
cut into 1/8th inch slices, cross wise

Put the bacon into an Emeril saucepan and sauté until crispy.
Add Paleo flour and cook flour.
Add salt to water.
Slowly add salted water, stirring to keep the gravy from burning.  Continue to add water and stirring until all the water is used up.

It only makes a small amount of gravy, but it does taste reasonably good.

I warm up/brown the roasted pork ribs cut into pork chops in a deep sauté pan.  Then I pour the gravy over it to capture the yummy brown stuff in the pan and serve.
