Grill Pan Fried Fish

I love sable fish or commonly known as black cod.  My hubby cooks it in a pan on the grill.
Grill Pan Fried Black Cod

1 piece of Black Cod (about 1.3 lbs) cut in thirds
Sprinkle with El Gaucho Seasoning
4 T virgin olive oil
1 11" All-Clad frying pan with cover






Preheat grill - 8 minutes
Preheat All-Clad frying pan with cover - 10 minutes
Verify readiness by tossing water into pan - water will skiddle when ready
Add 4 T virgin olive oil
Place fish into pan and cover
Cook for 12 minutes and check
Serve with arugula salad.  The texture and flavor of arugula brings out the cod fish flavor.
