Deviled Eggs

Can't have mayonnaise.  How does one make deviled eggs without mayonnaise?

Deviled Eggs without Mayonnaise (for 2)

6 hard boiled eggs
piece of ham 1 1/2" sq x 3/4" thick Tails and Trotters applewood smoked ham chopped very fine
2 to 2 1/2 Tablespoons cold water

Cut the eggs in half and separate the yolks from the whites.
Toss 1 egg yolk.
Mash remaining 4 yolks and add finely chopped ham.
Mix well.
Add 2 Tablespoons cold water and add more if needed.
Mix well and fill egg whites.
