Soup's On!

Bought hamhock from Tails and Trotters on Thu with a couple of quarts of Pork Stock.  Our flavoring is a little different from everyone else's soup because we have a sulfite intolerant person in the family.  Instead of the normal trinity of celery, onions and carrots (or the Southern bell peppers, onions and carrots) we do carrots, lots of fresh thyme, marjoram and oregano with cilantro.

Hamhock chopped up and our mirepoix of herbs (inside the Japanese Tea ball) and vegetables for the flavoring.








                    


Simmer for 3 1/2 hours and Soup's On!


You may decide to have the soup the way it is or add potatoes and carrots and simmer for another 20-30 minutes or until the potatoes are done.  I think I'll have mine over wild rice.
