English Pork Roast


1 8 pound Pork Loin Roast Center Cut prepared as an English Pork Roast
warm to room temperature
deep roasting pan with rack

Preheat oven to 450ºF.
Place roast in oven and roast for 30 minutes.

Turn oven down to 325ºF.
Roast for 2 hours and 15 minutes.

Checking with thermometer:  155ºF.

The skin will be crispy and the roast tender and yummy.  We use it as twice cooked pork for lunch!

How to carve

1.  Take crispy cap off and store separately

2.  Roast without cap

3.  Roast cut center piece.  Very well done!
