Chopped Pork Salad

We've been bitten by the creative bug lately.  Today we had chopped pork salad.  

Our philosophy, start with the best of anything and you can't go wrong.




Chopped Pork Salad for Two

Arugula (we buy the organic ready to serve ones from Zupan's Market)
2   1 1/2" pork chops from Tails and Trotters
1 large carrot grated coarsely

Cut up pork chops into bite sized pieces.  Sauté  until done in olive oil.

Lay out arugula on the plates.  Lay the grated carrots on top.  Divide the pork over the salads.

Serve immediately with olive oil, sea salt, and citrus infused olive oil on the side.

Very fast and easy lunch for two (or however many as long as you have one pork chop per person).  Just increase the number of carrots and arugula to purchase.
