Something funny happened on the way to boiling potatoes. After many years of "assuming" that a potato about a good sized that fits into the palm of my hands (& I have small hands) was small, I finally looked it up on the Internet. It turns out, a potato of that size is about 12 oz, meaning large potato. Yes, you guessed it, in my formative years as a cook, I used to visit my in-laws in Idaho where those gorgeous, tasty bakers come from. What my sister-in-law called large doesn't exist in grocery stores. Looking back, they were about 2 of the potatoes I "assumed" were medium potatoes! Ha, ha, ha...
So with that in mind, here is the simple, low down on boiling whole potatoes. Found on the Internet, a medium potato is about 5 1/3 oz; a large potato is anything larger up to about 12 oz (I'm guessing) & anything over that is Xlarge. :))
Boiling Whole Potatoes
2 Large baking potatoes, washed
1 medium sized pot with cover
water enough to fill the pot 3/4 full.
Bring the water to boil. Add the potatoes, cover, bring to boil; lower heat to high simmer and cook for 35-45 minutes. Drain. Do Not Cool; peel while hot. Perfect boiled potatoes.
