B&D Chow Mein

B&D Chow Mein

1 1 lb center cut pork chop well trimmed, sliced into 1/4” to 1/2 “ pieces
dice the fat trimmed from the pork chop
3-5 Tbsp Zupan diced shallots, onions, garlic mixture
3-5 Tbsp Zupan diced celery
spiral slice (using vegetable noodle slicer)
   1 large baking potato, peeled
   1 large Yukon Gold potato, peeled
   2 medium carrots, peeled
   1 large zucchini

1.  In a large frying pan, add the diced fat and render.  Take the rendered fat pieces out and set aside.
2.  Add diced shallots, onions, garlic mixture to taste.  When mixture is soft and slightly brown, remove and set aside.
3.  Sauté the sliced pork and cook to almost done; turning as necessary to prevent burning.  
4.  When pork is almost done add the spiral sliced potatoes and cover for about 5 minutes.  
5.  Check the potatoes to see doneness.  Should be about 3/4 done, if not cook until 3/4 done.  
6.  Return the shallot mixture and add the spiral sliced carrots and zucchini and cover.  Cook for another 5 minutes and check for doneness.  
7.  Stir mixture, and cook uncovered until done.

Serve hungry wife.
